In Honor Of Cinco De Mayo........
Sopa De Lima
Ingredients
6 carrots
6 cups Everyday FF Chicken Broth
3/4 cup short-grain white rice
3/4 lb. chicken breast, cooked
3 tbsp. fresh lime juice, to taste
1 tsp. kosher salt
1 tsp. black pepper
1/4 cup Parmesan soy cheese, grated
1 tbsp. flat-leaf parsley, chopped
Directions
Estimated Time: 45 minutes
1 Peel and slice the carrots.
2 Combine the chicken broth, rice, and carrots in a saucepan and bring to a simmer over medium heat.
3 Shred the cooked chicken meat into 1-inch pieces.
4 Cook the soup until the rice is cooked and carrots are tender, about 35 minutes. Add the chicken meat to the soup. Juice the limes into the soup and season with salt, and pepper and return to a simmer.
5 Ladle the soup into bowls and garnish with Parmesan cheese and parsley.
