Any Fruit Fast Low Fat Cobbler (Makes 4-6 servings)

It's hard to believe something this simple could taste this delicious. I especially love it with fresh or canned peaches.
Ingredients: 1/2 cup white sugar 1/2 cup flour 1/2 cup soy milk 1 teaspoon baking powder 1/4 teaspoon salt 2 cups of your favorite fruit, for cobbler
1. Combine all of the ingredients except the fruit in a bowl. 2. Pour it into an 8x8 pan coated with cooking spray. 3. Add the fruit right on top. The crust will come up over the fruit and cover it. 4. Bake in a 350 degree oven for 40 minutes.

I'm sure frozen fruit would work, Heidi. If it's already thawed I don't think it would take any longer.
Yep, Shell, I used canned peaches. A combination of harvest spice and raspbarry flavored, actually, because that's what we had in the house!

Now this is my kind of cooking...........not to many ingredients, easy, all in one pan..........fast, fast.....I can even use my GF flour mix for this one.......
Gotta hand it to you.............this is a WINNER!!!

That's strange! Hmm... can you cut and paste it into a word processing program, like Microsoft Word, and then print it out from there? I've done that a lot and hopefully it would format better that way. If not let me know and I can try something else!

OK... I figured out the calories making it with canned peaches in extra lite syrup........
IF you cut into 4 servings: 217 calories & 0.85 grams fat per serving.
IF you cut into 6 servings: 144 calories & 0.57 grams fat per serving.

on the LVFS board? I was almost tempted not to make it until I lost some poundage---but thanks to you, this way I know I can have 1/4 and be ok, or a whole half a cobbler-- in which case then it would be a meal.......

I'm making this for a party at work so I need to double or maybe even triple it. Can I just multiply the ingredients? Or do I need to adjust it, use more or less baking powder, soy milk, etc? I'm planning on baking it in a 13"x9" pan, and, if I triple it, an additional 8"x8" pan. How long should I bake it, or is that the same?

You should be able to just triple the ingredients without any problem. The 9x13 pan might take slightly longer to bake, so you can just keep an eye on it until it's turning golden brown and pulling away slightly at the edges. I hope this turns out well for you!!

I used frozen peaches - thawed them first - and mixed them with about a tablespoon of sugar plus a little cinnamon, nutmeg, and allspice. This is yummy!

I love you....I'm new IBS-D 6 months and with a sweet tooth !!! I found a can of peach pie filling (lucky leaf) NO HFCS,no fat,they also have apple.Love your recipe and so easy too ! Thanks
