quick 'n' easy mexican snack: soy quesadillas (made it up myself!)
take 2 white flour tortillas, sprinkle some shredded soy cheese (cheddar is good) on one of them, put the other over the top like a sandwich.
microwave for 15-30 seconds or till cheese melts OR warm in a pan on the stove till cheese melts a little, then flip over and warm on other side... they're crispier this way. no need for oil
cut into halves or slices and eat plain or with guacamole or salsa

I used to make these back in my regular cheese days, but I haven't tried it with soy (or in my case rice) cheese yet! I also had them with salsa.
