Can you believe I posted this on Recipezaar the same time I posted it here and not a single person has tried it?? They must be dairy snobs.

This recipe sounds really good but I respectfully question the amount of fat.

I figured 2 cups of soy cheese (16 oz x 5) = 80
1 1/2 cups soy milk = 5
1 TBSP Margerine = 11
Parmesan soy ? est.1 oz = 5

TOTAL 101 grams of fat

So if you make that six servings, that's about 17 grams per serving. Way over what I can do (I usually limit big meals to 7 - 10 grams).

Maybe you're using lower fat soy cheese??? If so please let me know which brand because I would LOVE to have mac and cheese again!

Leigh, you're completely right, this recipe is probably above the 25% fat limit. Unless you use something like fat free Soya Kaas, which I think tastes disgusting, there's probably no way you can make mac and cheese that's totally safe fat-wise. Personally, this doesn't bother me at all because it has so much soluble fiber built into it (the pasta). If you're worried about the fat you could always omit the margarine and the soy parm (it's still great without them). You could also try using less soy cheddar and adding some garlic or onion powder or dry mustard to give it flavor.

As I mentioned before, I add peas to mine, a lot of peas, because it's a good way to sneak in some insolubles, and because it adds color and more flavor. A BIG plus is -- it cuts the fat!
