Classic Bran Muffins (Makes 12 muffins)
These muffins used to be a favorite of mine, but I stopped making them when I gave up wheat bran. I finally tried them with oat bran, and they're just as yummy!
Ingredients: 1 1/2 cups oat bran 1 cup soy buttermilk (1 Tbsp lemon juice plus enough soy milk to make 1 cup) 1/4 cup unsweetened applesauce 1 1/2 Tablespoons canola oil (or can omit and just increase the applesauce to 1/3 cup) 1/4 cup Egg Beaters (or 2 egg whites) 2/3 cup brown sugar 1/2 teaspoon vanilla extract 1 cup all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon cinnamon 1/2 teaspoon salt 1/2 cup raisins
1. Preheat oven to 375 degrees. 2. Spray muffin cups with non-stick cooking spray or line with paper muffin liners. 3. Mix together oat bran and soy buttermilk; let stand for 10 minutes. 4. Beat together applesauce, oil, Egg Beaters, sugar and vanilla and add to buttermilk/bran mixture. 5. Sift together flour, baking soda, baking powder, cinnamon, and salt. 6. Stir flour mixture into buttermilk mixture, until just blended. 7. Fold in raisins and spoon batter into prepared muffin tins. 8. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 9. Cool and enjoy!

To make muffins with the bran only part of the oat that is insoluble instead of the whole oat?;Is that ok, even with the white wheat part of the recipe?

I'd still be a little cautious with this recipe as it's going to have a decent amount of insoluble fiber.
