Help I have a cooking question

I love the food network tv cooking shows. I saw Nigella Lawson made some fish cakes. I'd love to make these but am not sure as they are "fried" in oil. They are made with salmon and something called matzo meal? Can anyone tell me if this is ok or have a similar recipe. I actually don't like "fried" things anyways. thanks for the help.

I think I would stay away from that, because its fried in oil. I think you would be seting your self up for an attack! Baked fish would be much safer for you!

You can simply pan fry fish cakes in a nonstick skillet with a bit of spray oil, like Pam. They'll get nice and golden and crunchy, but you won't be adding the fat that deep frying would.
You can do this with fish or crab cakes of any kind. There's a crab cake recipe in Eating for IBS, and you can search the recipe index here on the boards for fish cakes (though I'm not sure I've seen any). Or, post Nigella's recipe and we'll modify it for you.

ok Heather here it is: Nigella's Salmon Fish Cakes 1 1/2 cups cold mashed potato 14-15oz can salmon (organic preferred) 1 tbsp unsalted butter, melted (if potatoe does not have enough) fat pinch of cayenne grated zest of 1/2 lemon salt and pepper to taste In large bowl mix together all fish ingredients with hands. Cover sheet with plastic wrap. Plunge hands back into mixture and form fat palm size patties. Place on sheet.Put in fridge for 20 min to 1hr. Coating mix: In shallow bowl beat 2 eggs. Dip fish in egg then in 1/2 cup Matzo meal. coat well. Melt butter and oil and fry till golden brown.

Shirl, this is simple to modify! The only thing I'd change is to use soy margarine or canola oil in place of the butter and either 4 egg whites or 2 eggs worth of egg substitute in place of the egg! Then, as Heather mentioned, I'd leave out the butter and oil and just brown it in a non-stick skillet sprayed with cooking spray. Looks delicious! Let us know how it turns out.
