Lower Fat Oatmeal Molasses Cookies (Makes 25-30 cookies... I got 31!)
I can't believe these are low fat. They have a great consistency and flavor!
1/4 cup dairy-free margarine, softened 3/4 cup sugar 1/4 cup molasses 2 egg whites or 1/4 cup Egg Beaters 1 teaspoon vanilla extract 1 3/4 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup oats, uncooked 1 teaspoon cinnamon 1/2 teaspoon ground ginger 1. Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until well blended. 2. Add molasses, egg whites and vanilla; beat well. 3. Combine flour and next 5 ingredients in a medium bowl, stirring mixture well. 4. Gradually add flour mixture to creamed mixture, mixing well to combine. 5. Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray. 6. Bake at 350 for 12-13 minutes or until very lightly browned. 7. Cool slightly on cookie sheets. 8. Remove from cookie sheets and cool completely on wire racks.

I just made these last night. Too wonderful, although I think I cooked them for a bit too long. Are they supposed to be just on the edge of crunchy - or are they supposed to be cruncy? All in all they taste great. Couldn't wait to sample one! Thanks.

I'm glad you liked them djw! They came out pretty crunchy for me too, more than I expected... but they were still nice and chewy in the middle. I bet they would be a little chewier if you cooked them a minute or two less.

Okay, wait a minute here ... I thought the recipe in the Feb. newsletter and this one were the same recipe?
So how do I get them crunchy if I don't want them chewy? I just bake them longer? How much longer? I want CRUNCH!

Lol, Bev, you're so funny. I baked mine for the 12-13 minutes and they were just starting to get crunchy, so maybe if you let them get a little brownier they'll be even crunchier??

Can you buy spectrum at regular grocerie stores? Or is that one you get at a health food store? What ones are the best to use?

Steph, Heather turned me on to Soy Garden, and I'm so grateful. It's HEAVENLY! The best thing about it is that it's non-hydrogenated, it's a healthy margarine. Okay, so it's still 100% fat, and ya still gotta use it sparingly, but it's SOOOO yummy and tastes like real butter more than any other I've ever tasted.
It's also delightful to cook with. I love the stuff.
You have to get it at the health food store, though, so when we drive down there I stock up. Give it a try!

a little crunchy on the outside (but a good kind of chunchy) and the inside was nice and soft but still have texture to it....
The 1st one I ate was still warm... just a sec...let me bite into another one.........
UUUmmmm.... SO GOOD... still a little crunchy..but I THINK maybe it sofened a little?? Funny... I can taste raisin but there are non in there....

I think you can sub oil, it just might change the texture slightly. I don't think I'd use any applesauce, though, because that would make them very different... much cakier. Although I suppose anything is worth trying! I actually don't use soy margarine either, I use Fleischmann's unsalted... it's dairy-free, but it's not non-hydrogenated, so admittedly it's not as heart-healthy. I've been meaning to try the soy margarine. So you can't get it anywhere in your area? That's a bummer!

Like you, Barbara, I loved them too. But I did a terrible thing. I put them all away in the cookie jar. Now, normally that would make sense. But in this case, no. You see, that cookie jar is ALWAYS empty. I knew hubby wouldn't look there. I was saving them all for myself.
I felt so guilty, so selfish, so horrible, I couldn't stand it -- so last night I told hubby where the cookies were.
Now they're almost all gone.
It's okay, I'll just have to make more, right?
I feel much better now after confessing.

My kids and hubby polished the rest after school today.
Like you I was being Miss Piggy!! For the first time in months I ate three cookies in one sitting. The cookies are low fat, healthy and yummy - I just couldn't resist.

Kree, I still have some of these from the other day when I made them! They stay fresh for a long time! I just love them! So yummy! I cant stop eating them! Already had 3 and its only 10:20 am...oh NO! I better stop!

Aww! Poor Bev. You were being so nice too! Your hubby sounds like my father. If he likes something, no matter how much you make it will be gone within a day. The man has no restraint. He actually had the nerve to tell my mother and me to stop buying candy because he couldn't stop eating it! Oy. So instead I just moved it into a secret stash in my room. I suppose you'll have to do that with the cookies too. Bummer that you didn't have one for your bedtime snack though!
