I found this recipe on line for low fat granola: Low Fat. below is the site I found the recipe on.
Vanilla Granola
All the taste and crunch, but without the fat. Ingredients: · 2 cups old-fashioned oats · 1 tbsp ground cinnamon · 1 vanilla bean, split and seeded · 1 cup each coconut, dried sour cherries or cranberries and golden raisins · 2 tbsp light brown sugar · 1/3 cup apple juice concentrate Method: 1. Preheat oven to 300F. 2. In large bowl, combine oats, sugar, cinnamon, and juice, and toss well. Spread on large cookie sheet and bake 25 minutes, stirring occasionally. Stir in coconut and vanilla seeds and bake 25 minutes till lightly brown. Stir in cherries, raisins. 3. Cool and store in air tight container for up to one month.

This sounds really good! To be extra safe, I'd eliminate the coconut (which is high fat) and I'd reduce the amount of the dried fruit. I'd also chop up the dried fruit which will make the insoluble fiber more tolerable.
