I found this recipe on the WW recipe swap. I'm wondering if I can change a bit - would it still taste good???
community recipe swap: Main Meals chicken enchiladas From the kitchen of BFLOSER
servings ' 8 estimated POINTS per serving ' 6 course ' Main Meals

Ingredients
1/2 cup sliced red onions 1/2 cup thinly sliced red peppers 2 cups sliced raw mushrooms 525g shredded uncooked chicken breasts 1/2 can of cheddar cheese soup 3/4 cup splendido light pizza mix shredded cheese 8 flour tortillas (10 inch) 2 cups salsa 2 cups cooked instant white rice, prepared 1 cup of water
Instructions
Cook chicken in large skillet, add mushrooms, onions and peppers, sautee 5-10 min.
Add the 1/2 can of cheddar soup, 1 cup of salsa and 1 cup of water. Simmer until mixture thickens.
divide mixture onto the 8 tortillas, roll up, place in baking pan with seam side down.
pour 1 cup of salsa on top and sprinkle with the shredded cheese.
Bake at 350 for about 15 min. or until the cheese is bubbly.
---I Don't have access to that much salsa and probably shouldn't eat that much anyway! I can't get cheese soup (yuck!) SO...if I used a tomato veg pasta sauce (minus pasta of course) as the 'salsa' and a cream of chicken soup and Japanese rice instead of the instant - would it still be good? What do you think?

Kim - Look on the ingredients on the Cream of Chicken soup. If dairy is a trigger for you and if it has dairy in it, don't use it. What about a soup that doesn['t have dairy in it and thicken with mixture of cornstarch/water instead. Right now, I can't think because I need to go do something else, but I'll think about it while I take a shower. That always helps!

Hi - half a can of soup isn't much. I think you could just puree an equal amount of silken tofu and that would work. If you can't find soy cheese don't use the real cheese at all. The rice substitution and pasta sauce sound like they'd work just fine.
Sharon's right - "cream of" canned soups almost always have cream in them. They're super high in fat, and it's all dairy, so definitely not safe.
