2 cups cereal ( rice krispies, corn flakes or your choice of safe cereal) 3/4 cups plus 2 tablespoons diveded flour 1/4 cup brown sugar 1/2 tsp cinnamon 1/2 cup unsalted margarine ( or your substitute) 1 8oz container of soy yogurt any flavor (or use your IBs safe yogurt) 1 egg ( 1/4 cup egg beater)slightly beaten
Heat oven 350. spray 8 inch square baking pan with no stick cooking spray. mix cereal, 3/4 cup flour,sugar and cinnamon in a small bowl. Cut margarine until mixture resembles coarse crumbs. Press 1/2 of the mixture in bottom of prepared pan. mix yogurt, egg and remaining 2 tablespoons of flour in another small bowl. Spread over cereal mixture in pan, sprinkle with remaining cereal mixture. bake for 30 minutes or until golden brown. cool in pan on wire rack. Cut into bars. makes 16 bars.
Got this recipe from a diabetic cookbook I bought to cook meals for my mother n law. What a great breakfast for on the go!! enjoy!!

try cutting the margarine quantity in half, and choose a non-hydrogenated variety so the oil is heart-healthy.

Yes I tried these. I and my family found they were a little dry and tasted like flour. Maybe if I make them again; I will decrease the flour. I used strawberry yogurt. Sue

I made them I got the original recipe from a diabetic cookbook. I tailored it to be IBS friendly. I agree the will taste a little flourly, add some fruit to them or a favorite fruit yogurt. I use blueberry soy yogurt and added a little more tham usual. Try them I think you would like them. The original recipe called for wheaties cereal. Play with the recipe to get your right texture and taste. Sherri

I made these bars with vanilla soy yogurt and I found a safe cereal called Koala Crisp. My margarine is also safe, vegan with no hydrogenated oils. I used all the same measurements and my entire family likes them.
