Shortbread Cookies 1/2c. icing sugar 1/2c. cornstarch 1c. apple or soy butter 1 1/2c. flour Mix dry ingredients in butter. Blend with mixer on low speed. Then turn to high. Mix into a whip cream. Drop spoonfuls on cookie sheet. Bake 325F, 20 min.

Have you made these with apple butter? I would be curious if they turned out. Shortbread cookies, by definition, require a great deal of fat (butter/margarine) to make them tender. I can't quite imagine apple butter having the same effect.

I haven't tried apple butter. So soy butter will do.

Soy butter would actually make the fat content of the cookies way too high. I'd be interested to know if apple butter works. Shortbread cookies are so dependent on butter for their flavor and texture it would be nice to find a safe replacement.

Did anyone ever try to make this recipe w/ apple butter? How'd they taste??? Also, what is icing sugar? thanks!

Lithelady, icing sugar is also called powdered sugar. You can find it in any grocery store with the other sugars.
