Ginger Butternut Lentil Soup

This soup recipe is fabulous; it's from "La Dolce Vegan", which has tons of yummy vegan recipes!
Serves 2-4
1 small onion, chopped 1 T olive oil 2 inches fresh ginger, grated 2 cups butternut squash, cubed 2 cups vegetable stock 1 14 oz can diced tomatoes 1/2 cup red lentils (uncooked) 1/2 t salt 1/2 t ground black pepper
In a medium soup pot on medium heat, saute the onion in oil until translucent. Add the ginger and squash and saute for 5 minutes. Add the stock, tomatoes, lentils, salt, and pepper. Bring to a boil, then reduce heat. Simmer for 15-20 minutes or until squash is cooked. With a hand blender or food processor, blend half or all (I prefer all) of the soup until smooth (be careful when blending hot liquids). Return to pot, reheat, and serve. Also doubles and freezes well.

I make this, except without the diced tomatoes. It's fabulous. I find that it makes about 2 hearty vegan main event servings. Also, I've substituted canned, drained, and very very well rinsed cannelli beans (white kidney beans) and navy beans (instead of red lentils) & it's wonderful. The olive oil is unnecessary. Also, I like to give it a twist of fresh lime juice and kick it up more than a few notches with chiles, etc. It's a FAST and FRESH recipe, open to improvisation.
"La Dolce Vegan" is a fabulous cookbook, incidentally.

For just 2-3 servings? And do you cube into really small pieces? Or like an inch or 2 thick?

I'm just afraid the veggies will burn and not cook appropriately. I thought Wind must have made this soup using a different cooking method that she didn't post?
I really like to stick to original recipes without too many alterations. I don't trust my cooking abilities!
Maybe I'll look through some other soup recipes to see how much oil they use. I would like to use some oil. Maybe 1 T is a safe amount.
I think I'll use 1/2 T or less.

I think if you just cooked them in water, that would be fine. You won't have the onion anyway, and it's the only think I'd think would be different sauteed rather than boiled.
I generally don't put oil in my soups. I just "saute" the onions/carrots/celery (usually one of these, not all of them at once) in a little cooking spray and water. They take longer to cook, than they would if you were sauteeing them in oil, but they bother my stomach far less.

If you don't want to use oil, just spray the pan with some fat-free cooking spray first! I sometimes do that.

Thanks Lisa Marie! Do you use all the oil? I ended up using half the amount.
Can I ask what you usually eat along with this for lunch? I'm not sure if the squash is enough SF either. Can't wait to try it! I pureed the whole batch and only used 1/3 cup lentils...for my first batch. Hopefully, I will do fine and be able to use the full amount next time.
This was so easy to make! I found cut up squash at Trader Joe's...so didn't even have to peel and cut the squash. Just cut the cubes smaller!

I think I do use all the oil; though I probably should cut it in half! I LOVE this soup! It's a staple for days when I have an orthodontist appointment and I can't chew anything. You get veggies and protein all in one dish! I also usually double the recipe and freeze half of it for another day.
I don't usually eat much with it, other than maybe a slice of bread with preserves. And lentils are about the safest bean you can eat, so they shouldn't cause you any trouble. I still take Beano with everything, though.

Onions? Not sure. Since I tend to have gas and bloat every day, I just take precautions and don't eat as many gassy potential foods as possible. Especially since this recipe already has lentils.
I don't add onion to anything because I'm so prone to gas and bloat. I cannot believe so many people can eat cooked oinion. I love the taste and really miss it.

Question, New at cooking these meals but when I was shopping for lentils it did not indicate red or any other color could it be that there is only one kind of lentil bean or is there truely a red lentil beans that I need to look for. Thank you all for your receipes I'm not much of a cook.

Lentils do come in different color varieties. The typical grocery store usually only carries one kindd. But if you go to a HFS or Whole Foods or Wild Oats, you can find the lentils in red, green, black... I get the red lentils in the bulk bins at Whole Foods or Wild Oats.
Incidently, red lentils are suppose to be the easiest type of lentil to digest, so it's a good one to start with.
I hope you find them...they are very good!

I'd guess you could substitute veggie or low fat chicken broth without any trouble. Might puree a bit of the soup when it's done cooking to thicken it as the broth will be thinner than the tomatoes.

You just need something to replace the 14oz tomatoes called for. I'm not sure what the mock tomato sauce you were asking about is, but don't know why that wouldn't work.
If you tolerate roasted red bell peppers (the kind you can buy bottled) you could puree some of those with liquid to replace the tomatoes too.
I'm actually betting you could just omit the tomatoes and not even replace them, and not notice much difference. Worst case is the soup looks a little too thick, and you have to add more liquid of some kind.
Soups are nice and forgiving that way!
