question about Brer rabbit carrot cake

I want to make a layer cake; anyone know if this can be successfully altered and how much it makes?

Well I might just have to pour it in pans and see what happens. I can usually time it okay. I will have to post the results. I suppose it will be 2 pans, but many it will fit better in three. I also need to figure out what to put between the layers.

I am making this cake in the morning into a layer cake. I might make 1 1/2 times the recipe and pour into three pans if needed but we will see in the morning. I am also making cream cheese frosting. It will be some soy cream cheese, some margarine and some low fat dairy cream cheese. I don't eat much frosting so I should be ok for just this once. Hmmm I'm not sure I have margarine! eek!

Indian party and carrot cake and a few recipes new

The party went really well! Everyone had fun, but I had way too much food. I really went overboard. I made the cake with 1 1/2 times the recipe and put it in 2 cake pans. I believe it took 34 minutes to bake. I made soy cream cheese frosting which was good but a little runnier and I put little frosting carrots on the cake. I put in cardamom instead of nutmeg and I added fresh ginger. I put a little too much ginger and I was worried but after the first bite you couldn't taste it anymore. So the cake was very good and moist and really couldn't be better. I didn't get a lot of comments on it but by then we were deep into a movie. All the bowls were finished up and my hub served very big pieces.
Some more random thoughts:
Heather I found asofoteida powder at a new Indian market that just opened (right on time!). I don't know what I will use it for but oh well. I also bought frozen naan and roti breads there so it was cheaper than buying them take-out. I love that there is a market pretty close now. I bought several spices. I almost freaked out Friday because I had been feeling ill in the morning and didn't get as much done as I wanted. Then after shopping I got onto the freeway into stopped traffic. It took me an extra hour to get home and I was so upset since I had so much to cook and prepare and clean (since I had been ill twice that week). But I got it all done and relaxed later on.
I am going to post my curried chicken salad bites recipe since they are so popular. I came up with it for a contest but didn't win.
Curried chicken salad bites
5 oz chopped cooked chicken breast
1/4c coarsely chopped cashews
1T. golden raisins
2t curry powder
1/4c chopped scallions
1/3c mayonnaise (reduced fat)
1/4c mango chutney (smooth part only- no chunks)
15 mini fillo shells
scallion tips

Mix chicken, cashews, raisins and scallions in a medium bowl. Add curry and mayo and mix thoroughly.
Place a small spoonful of chutney in each shell. Mound chicken mixture into shells. Garnish with a scallion tip if desired.

Also this punch was good and not too sweet:
Pomegranite punch for parties
1 bottle pomegranite juice (64 oz)
1 2 litre ginger ale
1 package "Jamaica" juice mix (found in the Mexican section, made by Klass)
ice cubes

Curried mushrooms:
24oz button mushrooms, quartered
1/2-1 chopped onion
1 tomato, seeded and chopped
around 3 gloves minced garlic
1T or so minced ginger
1T. ketchup (optional- I forgot it last time)
1t turmeric
1-2t garam masala
1t or to taste salt
In pan with cooking spray, cook onions til soft. Add garlic and ginger and cook til golden. Add mushrooms and tomato and remaining ingredients. Cook to your liking. (you may want the mushrooms cooked down really well or still spongy).
