Heather's Banana Creme Pie

I tried Heather's Banana Creme Pie. It was delicious and so easy to make.....My family loved it. I am not a chef, but I'm learning! The graham cracker crust didn't really bind together as well as I'd hoped though...any suggestions?

I love that pie! I make the chocolate variation. I'm making it for Thanksgiving. I think last time I made it, I spritzed the crust with non-stick spray before baking. I think I saw Heather do that on Heather Cooks once, and that's where I got the idea from.

I also do this for the breads with the crumb toppings (like apple spice bread) and it helps keep the topping from falling off when you take it out of the pan.

increase the canola oil in the crust a bit - try an extra tablespoon or so. Or, add about 1/2 an egg white - this works well to bind crusts, but you have to use just a wee bit or the crust will be tough and shrink as you cook it.

Thanks, Heather. I really appreciate this site. The silver lining to this misery-learning to cook with lessons from Heather & Company! If you do develop some DVD's, I'd be interested.
