Heather's Better Than Cheesecake

Wow I made this for the first time on Saturday and was really impressed! I used Blackberries for a topping. Hubby tried it and really liked it as well. (he is very picky about his cheesecake!) Heather what a great substitution for the real thing! I can't wait untill there are more fresh fruits available to try different toppings with it!!

I want to make this today and was wondering if I can use an egg replacer. Will it turn out? Also, should I just add the powder since there is already 1/3 cup of lemon juice in the recipe?

the egg whites are thickening and stabilizing the cake while it bakes (and the eggs cook). I don't know how a replacer would work.

I'm so sorry - maybe someone else has experience with this?

Thanks for responding. I tried it and it worked perfectly. No problems. I was totally amazed that you were able to replicate the texture and taste of a real cheesecake with tofu. Great job and thanks!!

I made this last night and let it chill....had a piece for breakfast this morning and it is fabulous! I used a raspberry topping and I used orange juice (and zest) rather than lemon, in both the cheesecake and the topping. Just wanted to say thanks for all the awesome recipes in your book, Heather. I haven't made one that I didn't love yet.
