questions re IBS cookbook

Hi - re p.188 (Grilled Tuna w/mustard seeds,etc)do you heat the spice mix? (Otherwise, why put it in a pan instead of a bowl?) And p.36, re toasted sesame seeds, it says directions for toasting nuts are "above". I often miss things but I couldn't see them. And lastly, I'm an ex-pat living in the UK and we can't get frozen orange jiuce concentrate here, or canola oil. Should I just use olive oil, or can I use rapeseed oil? Thank you!

For canola oil, don't use olive oil as it's too flavoursome. Use rapeseed or Corn or basic vegetable oil.
Not sure on the others as book is in a box atm!

OK, thanks! I see you live in England, too - what do you use to replace frozen OJ? BTW, it's my husband who has IBS - I'm just trying to change his diet for him. I can sympathize, though, since I had ulcerative colitis for 25 years - I'm all better now, though!

I can't remember ever having done a recipe that called for it...but then my memory is atrocious! What recipes are asking for it? Maybe you could use some fresh juice instead???

Hi - the spice mix is meant to be put into a flat pan (or something like a pie plate) so you then have the shallow surface you need to coat the tuna steaks with the spices. You could use a bowl, it would just be trickier.
You're right about the missing toasted nuts instructions. If you can't find toasted sesame seeds, use regular white sesame seeds that are untoasted, and toast them yourself. Just sprinkle a shallow layer into a dry skillet (NOT nonstick) and heat over medium, stirring frequently, until the seeds are golden brown. This will happen pretty quickly.
I'm not sure how to sub for the orange juice concentrate. What you might do is take regular orange juice and simmer it in a small saucepan until it reduces and thickens. You might also stir some orange marmalade into a little orange juice to make it thicker and more concentrated.

I was afraid you'd say that! I can't remember which one it was, either - I just knew I couldn't get the frozen juice. It might have been a blender drink; anyway, not to worry! Thanks for replying.
