I'm wondering about chili. Is it safe? How about with ground turkey breast?

Hi - Check the recipe index - there may be something posted.
In general, if the recipe is low fat, and either without meat or using ground skinless turkey or chicken breast, you should be fine. BUT - make sure you have this with a high soluble fiber base of rice, bread, low fat cornbread, etc. There's going to be a lot of insoluble fiber in the chili, and the beans aren't pureed, so you need that margin of safety from extra soluble fiber.

Here's a really, REALLY good vegetarian chili recipe: Chipotle-Black Bean Chili. Somewhere I have another chili recipe that feeds a crowd and does contain meat (you could use ground turkey, or more beans). If you want it, let me know.

Thanks for the recipe. It looks really good. One question where do I find minced canned chipotle pepper? Would it be with all them spices?

Canned chipotle peppers in adobo sauce are in the Mexican food section or wherever you'd find canned green chiles and jalapenos. You may have to ask someone who works at the grocery store. Good luck!

you can also find dried chipotle chiles, whole or ground. If you buy the whole ones grind them in a spice grinder.

Hello there. Today I made chili for the first time since being diagnoised and I enjoyed every minute of it. To be on the safe side I took my hand blender to it (I use it for everything), so my stomach could digest it a bit easier. I also made Heather's cornbread with it and that turned out great! Here is the chili recipe in case you want a easy one (sorry it's vegetarian, but I'm sure you could add turkey if you wanted):
In the morning, put in a slow-cooker: 1 16 oz. can tomato sauce 2 16 oz. cans kidney beans 1 tsp. salt 2 tsp. chili powder (2 Tbsp. dry tvp, optional) 1 small onion, cut up (*or* 1 Tbsp. dried minced onions) Cook all day and eat. Variations: substitute for one can beans, 1 16 oz. can corn substitute black beans, pintos, or any other type of canned beans Stir in salsa at end, if desired, or add one small can of mild diced green chiles. The above recipe can be made in any quantity, though the seasonings will need to be adjusted down a bit.
