Heather-Another dessert question for you

Hello there. I am really on a roll with baking desserts from your book and have picked the Spiced Rum Strawberry Angel Food Shortcakes. The strawberries that I have seen so far (at the stores) have been a bit rubish and so I saw that we could sub. with Mangoes. Does it have to be fresh or can they be frozen? I know with strawberries, they get a bit squishy when they thaw. Before I head to the store I thought I would ask the important questions. I also noticed that my angel food cake mix contains nonfat milk. Do you think that will be a problem? Why does everything have to contain milk!

PS I made your zuchinni bread which was a huge hit with my grandma, who takes a fozen piece out the night before and has it for her brekkie.

Hi there - I've only used fresh mango (and actually I've never seen frozen) but my guess is that it would work really well. So should fresh or frozen peaches.
I don't know what's up with the nonfat milk in the angel food cake mix. The recent mixes I've used have had that too, but I know the mixes I used to make did not have this ingredient. I think it's a pretty trace amount, and there's certainly no fat in it. I haven't had any problems. Unless you know that any trace of casein or whey will cause problems for you, the mix should be fine.

Hello. I made the spiced rum angel food shortcake today and it turned out really good. I found a mix that didn't have milk in it and it was just Safeway brand, which is what I normally buy, but for some reason bought the Betty Crocker one awhile back. Being lactose intolerant isn't very fun. I notice that 1/2 the time I can tolerate a smidge of my soy cheese and other times wish I would have steered clear from it.
Anyways, I made it with frozen (half way thawed) mangoes which you can find at Fred Meyer and Alberston's.
It is a dessert I think I will make for my friends birthday coming up in a few months time.
Looking forward to making another one of your desserts in the next few weeks.

I've been getting the mix at QFC, which only carries brands with the non-fat milk in it. This has been really bugging me, since I knew I'd used mixes in the past that did not have this in it. So, next time it's off to Safeway for me!

Funny you say that, because I was thinking the same thing when I looked at the ingredients for the Betty Crocker mix. I knew I had used a safe mix before when I made pumpkin muffins and my mint muffins. Not only that but Safeway's mix is cheaper as well.
