Cucumbers

Hi all, Does anyone have any recipes that use cooked cukes? If not, what can I do with several wonderful home grown cukes a neighbor gave me yesterday? I've only been on H's diet for 3 weeks and am still being very careful in regards to any insoluble fiber b/c I'm still dealing with stabilizing my colon after many years of severe constipation. So, I'm afraid to eat these raw even if I peel and dice them. Should I be? Thanks!

They are not cooked, but there is a recipe for Asian Sweet Pickled Cucumbers in Eating for IBS that is good.

I find if I remove the seeds and peel I have no problem eating them raw.

Ok, thanks I'll try both ideas in the future. However, I'm only just starting to stabilize on H's diet so I'm still avoiding any raw fruits and vegies other than in smoothies. So, I'd still love to know if cukes CAN be cooked. It seems to me like cukes would be able to be diced and sauteed. Yes??? No??? All ideas and thoughts will be appreciated b/c these cukes are just too pretty to waste!

Hi - they can be cooked. I've seen them in Thai sweet and sour stir fries with other veggies, and they're good. I've never tried it at home, but as long as you peel them and seed them and cook till tender, you should be fine.
