coconut macaroons??

Does anyone of you know a nice recipe for coconut macaroons without egg yolks, wheat flour or even marsipan???
Strangely, inspite of my otherwise very restricted diet, coconut does not seem to be a trigger for me, at least not in small quantities. In the UK I used to be able to buy delicious gluten-free coconut macaroons but here they either contain wheat flour or marsipan.

These are chocolate-dipped, but you could just omit that part. recipe
I haven't made them, but they sound good, and Gourmet is usually reliable. Be a bit careful with these, as coconut is pretty darn high in fat.

Susaloh - This was the only coconut recipe I could find right now. It's not macaroons but it sure looks good:
COCONUT RICE PUDDING
3 cups light coconut milk (sold at Trader Joe's--comes in a 14 oz. can) 3/4 c fat free or light soy milk (I'd use vanilla flavor) 1/2 c long grain white rice 1/4 c packed light brown sugar 1 tsp vanilla extract 1/2 tsp ground cinnamon
Combine coconut milk, soy milk rice and sugar in a med saucepan. Bring to simmer, cover and cook over low heat until the rice is tender and the mixture is creamy, about 1 hr. Remove from the heat, stir in vanilla and cinnamon. Serve pudding warm or chilled.
Makes 6 serv (ea serv 1/2 c) Points WW 5
I might try this one and cook it in the microwave, like I do regular rice. It doesn't take half as long.
