Ok, I'm really excited about the hulless popcorn. If it's true, then I want to know if my FAVORITE recipe can be made IBS-friendly.
Caramel Corn:
1/2 c brown sugar 2T butter 2T Corn Syrup 1/8t baking soda
Mix butter, brown sugar and corn syrup over low heat until sugar disolves. Turn to medium heat until mixture starts to lightly boil (about three minutes). Add baking soda. Whisk quickly until mixture fluffs up and changes to a light caramel color.
Pour over freshly popped popcorn. Be careful, though! This stuff is REALLY hot and it sticks to you if you touch it.

Jules - that sounds yummy! I'm not sure if you'd sub canola oil or soy garden spread type stuff or either. I hope somebody has an answer though, cause I can't wait to try it!

Yes, this recipe is absolutely fabulous! I've turned my family into caramel corn snobs because this is so good! They don't like anything else.

Hi Jules - Try using one of the non-hydrogenated soy margarines that are butter flavored for the butter, same quantity. Should work perfectly!
