While in Idaho, I found at the Boise Co-op, Coffee Flavoring. I had the store call the manufacturer and ask if it had any coffee in it, they said NO! So I plan to flavor the Peppermint Fudge Cake with Coffee Extract instead of the peppermint. I can't wait as I miss my flavorful Kahlua cakes. This coffee flavoring is Frontier brand, alcohol free, natural flavors.

Hi - this should work great! I've also found that I can bake with small amounts of decaf instant coffee powder with no problems at all (and I cannot drink coffee without a serious attack, so it's definitely a trigger for me). I usually use 1T dissolved in just a few teaspoons of hot water or orange juice, and add it to cake batters. Works really well for the peppermint fudge cake instead of the peppermint, like you were thinking!
