I bought some ice cream from WholeSoy last weekend that is SO good. While eating it, I realized that it wasn't actually soy ice cream. The label says "frozen cultured soy living cultures." I have the Creme Caramel flavor - low fat (only 1 gram of fat per serving!), dairy free, gluten free, no cholesterol. Here's the rub: I know that "living cultures" are healthy bacteria, but are they ibs-safe? My birthday's next weekend and my Mom's making that red velvet cake that was posted awhile back and I'd love to serve this "ice cream" with it, but I just can't decide. I didn't eat enough to see if it had any adverse affects on me (due to the fact that the whole living cultures thing wigged me out). So, what do you think? Has anyone tried this? Know anything about frozen living cultures? Here's the ingredients: pasteurized soymilk, organic cane sugar, organic creme caramel, organic tapioca maltodextrin, organic soy oil, fruit pectin, salt, locust bean gum, guar gum, natural flavor, live active cultures (l.acidophilus, bifidus, l.bulgaricus, and s.thermophilus).
