Recipe error? Help, Heather!

I just received an ice cream maker for my birthday and was all fired up to use the fresh tangerines in the store to make Heather's "Eating for IBS" cookbook "Fresh Tangerine Gelato" (P. 237), when, in reading the recipe more carefully, I saw that it calls for 7 cups of tangerine juice, yet makes a quart. A quart being about 4 cups, something is off. But should I cut back the juice to 3 or 3 1/2 cups?? Keen to make it! Help!

it's been quite a few years since I made this - I know the recipe did come out well, so I'm not sure why the math is off. You might make the whole recipe, and if it is too much for your ice cream maker just put the leftover mix in the fridge and make a second batch later. Please let me know what happens - if there is a glitch I can have the next edition of the book fixed.

Thank, Heather, for your quick reply! I notice your other sorbet recipes have about the same amount of sugar and egg whites as this one, but about half the liquid. So I think I'll take a chance and reduce the tangerine juice by half and see how that works. I'll let you know the results. I've been cooking almost exclusively using your book for the past 2 years with great results IBS-wise and taste-wise. But didn't have an ice-cream maker so couldn't make some of the recipes. So glad I finally do! Now if I could just find that darn Srirachi sauce . . . !
