My husband and I are having my parents out to our house for a BBQ tomorrow night. I'm planning on hamburgers and something else that's safe for me (maybe some shrimp kabobs or some chicken)...but I was wondering if anyone has a recipe for a "safe" potato salad or something that will go well with hamburgers, shrimp kabobs or chicken that everyone can eat. You know what I mean?

Nugget - try one of the cold pasta salads on the recipe board. I posted a plain mac, a fancy mac with pineapple and almonds and chicken, a greek inspired pasta salad. If you want potato salad, I don't have a recipe but you can most likely modify one. Use fat free mayo, use only egg whites, and flavour it up as you normally would. It should be fine. I would ask Tess on the recipe board - she is amazing.

I make my potato salad with red skins potatoes, green been, red beans, and garlic vinigerette dressing! If I have left over chicken I toss it in too! Not your conventional potato salad but yummy. If you can handle onions that would be good but they make me SO gassy!

Hi - You can take a regular, traditional potato salad recipe and just use fat free mayo. Add some cider vinegar, fresh lemon juice, and yellow mustard to up the flavor level. You can also whisk in just a bit of olive oil to the mayo so there is some fat in there - that tastes better than none at all, and the potatoes will give you a great soluble fiber base.
