SPINACH KUGEL--how to make it IBS-friendlyz?

This is one of my favorite recipes, but I have not made it in 3 years because it used to trigger IBS attacks. Is there any way to make it IBS-friendly?
Spinach Kugel
one box cooked chopped spinach 1/2 cup skim milk 3 eggs one bag bow tie pasta one packet onion soup mix 1/2 stick margarine
Cook bowties, spinach, drain. Mix well in bowl the following: melted margarine, onion soup mix, eggs, milk. Add spinach, drained. Then add noodles and bake in glass pan sprayed with cooking spray. Bake for 30-40 mins at 350 F.
I figure I have to leave the eggs in since they bind the kugel together. The prob is the margarine...I wonder if I could omit it, and how would it taste if I did?

Hi - I think if you substitute 6 egg whites for the 3 whole eggs, plain soy milk for the skim milk, and use 3-4 T canola oil for the margarine you should get great results. Considering how strong the onion soup mix will flavor the recipe, I doubt you'll miss the flavor of the margarine at all.
