Corn Pancakes

I saw a corn meal pancakes on fatfree.com I modified it slightly
Corn Pancakes
2 cups flour 1/2 cup cornmeal 2 tbsp cornstarch 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1/4 cup applesauce 1 3/4 to 2 cups rice milk 1/8 cup maple syrup 1/4 tsp apple cider vinegar Mix dry ingredients together. Then add the remaining ingredients. Make sure all the ingredients are mixed together well. Batter should be spongy -- not runny or thick. Preheat frying pan over medium heat. Pour a ladle full of batter into pan and cook on both sides until golden brown.

I've made something similar, and they were really good. You can use mashed ripe banana for the applesauce, too.

I'll have to dig it up...I know it's somewhere, just not sure where. This is why I need Mags to come over and organize my recipes for me!
Use the recipe you found, and just replace the applesauce with 1/4 cup mashed ripe (black) banana.

OK, Heather, maybe I'll stop by if I make it out to Seattle. Now that I'm handling my anxiety a little better from the hypno, I've been feeling a little more confident and I've been thinking about going there soon anyway to visit some family I have out there. I haven't been out there in like 12 years. So, maybe I can stop by and organize your recipes if I do.
