Great oatmeal cookie experiment!

I did a little experiment last night, and it turned out well! My main motivation was to sneak some veggies into my 4 and almost 3 year old boys, neither of which seem too interested in veggies as they were as toddlers. So I made oatmeal cookies according to the directions on the canister of quick oats, but substituted one cup of pumpkin for the called-for one cup of shortening. They are really good!!!! The kids are enjoying them, and so am I, because it occurred to me these are really IBS friendly, no added fat at all (though I'm not sure how they'd do for IBS-D'ers, I'm IBS-C so it can only help, the fiber from the pumpkin and oatmeal). The only modification is that the dough does not spread as it bakes, like cookie dough, so you can't just drop balls of dough on the cookie sheet, you have to spread them thin and round, however you want them to be. Here's the recipe I used, my husband is even eating them and he usually avoids my experiments (like the peanut butter cookies with carrots in them, the kids never knew but he wouldn't touch them).
Preheat to 350
1 cup canned pumpkin
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp salt
3 cups quick oats
optional - 1 cup each walnuts and/or raisins, I left out
Mix wet ingredients and sugars well, then add flour and following. Bake 10 mins or so, it worked well for me, cookies are not quite so crispy as almost a little cake-y, might could have baked them a little longer if you like crispier.

The cookies sound great!! I can't imagine my boys not eating veggies - all three eat fresh salads. Their favorite veggies are spinich (because Popeye gets large muscles from eating spinich), broccoli and cauliflower. Good luck with more of your experiments!

Michelle, what a wonderful finding! I love finding ingedient subsitutes! . I think the best is knowing I can subsitute canola oil for applesauce. I told mom that once, and i dont think she believed me! lol. Oh well, as long as I know....

with all that soluble fiber from the oatmeal and pumpkin. What a great idea Michelle! I've been fiddling with oatmeal cookies for a while trying to make them IBS safe, and reducing the shortening just really whacks the results. I've got to try your idea!

I hope you like it, again they are more cake-y than a crispy cookie, but I don't mind that and neither does the family. That batch has vanished, actually, so they must have been good, and I enjoyed my share with no adverse reactions at all!

Oh my gosh.... these turned out so good!! Hubby came home right after the 1st dozen came out of the over.... he said he could smell it outside
I did not use the walnuts and/or raisins and the only addition I made was 1/2 tsp Pumpkin Pie Spice (combo of cinnamon, ginger, nutmeg, & allspice) YUMMERS!! It made almost 3 doz....

I used eggbeaters and it worked just fine
Note: after they cool....do not store in plastic tuppaware type container after cooled.... they turn really soft. I'm not sure how to really store them.... right now we have the lid off the container.

I like to serve baked goods that aren't too sweet. So I was wondering what all of you who've made these thought about how sweet they are w/2 cups of sugar?
Anyone have any suggestions/advice about how they might taste if I reduced the sugar quantity to only 3/4 cup of each instead of 1 cup each? Thanks from a newbie IBSer baker!

I know you didn't direct it at me but I thought I would answer. It has been awhile since I made them but they were a little sweet. I like sweet cookies. Give it a try reducing the sugar the way you described. It can't hurt to reduce the sugar. You may just have to experiment with it. I think the pumpkin does take some of the sweetnes away but taking out a total of a 1/2 cup shouldn't be a lot. I realize I may not be too helpful, sorry.

Yes, you were helpful Torbetta so txs for your input. I'll repost here once I've made them to let y'all know how they turn out using 3/4 c of each sugar. Worst case is the dogs will always eat anytning! LOL
