Home made spaghetti sauce

Heather, do you have a recipe for home made spaghetti sauce that I could use to make spaghetti? I miss spaghetti so much and don't want to buy the store brand.

kyangel i have used this recipe once and had good luck with it. I am somewhat sensitive to tomatos and have reflux but did ok with this.

marinara sauce
1 T olive oil 6 ounces tomato paste
1/4 cup chopped onion 4 ounces water
1/4 cup chopped celery 2 T fresh parsley
1 garlic clove finely minced 1 T dried basil
3 cups canned tomatoes 1t sugar

heat oil in lrg sauce pan saute onion celery and garlic until softened
Place remaining ingredients in food processor or blender and puree until smooth.
Add tomato ing. to saucepan cover simmer over very low heat for 45 minutes to 1 hour.

I added mushrooms and my family loved it.

Is this recipe ok for new people? What do you mean by canned tomatoes can I use crushed?

Cooked tomatoes are acidic, and that can trigger IBS problems in some people (though it's more likely to affect upper GI disorders like heartburn or GERD). But, cooking the tomatoes with a bit of sugar helps neutralize the acidity - see a whole thread on this on the recipe board. And, having the sauce with a soluble fiber base (like spaghetti) can help a great deal. Finally, eliminating the meat and dairy that are often in tomato sauces, as well as the high fat content in many recipes (from olive oil), makes things much more IBS safe.

If you're stable, cooked tomato sauces should be just fine. If you're in the midst of attacks, be careful.

And for most sauces you can use crushed, diced, or even whole canned tomatoes - they'll all cook down over the long cooking time, especially if you mash/stir them as things cook. Or you can start with canned pureed tomatoes. I've had good luck with all variations.

Heather, is that why my spaghetti ALWAYS triggers an attack with me? I love the stuff, and I make my own sauce (thanks to my dear friend, Tony Flaccomio), and yes I add sugar to cut the acidity -- but I always get sick, no matter how little I eat of the stuff. I never add meat, and I know better than to use any kind of dairy cheese, so it has to be the acid of the sauce on my tummy? RATS. Bev

unless you're using a lot of oil in the sauce. If you're not, then it's the acidity from the tomatoes. Some IBS folks can totally tolerate it, some have to be careful, and some just can't take it at all. Try Mags's idea of pureeing roasted red peppers instead of tomatoes for a sauce. She just posted this on the recipe board.

A pinch of baking soda will also neutilize acid in tomatoes.
