I think I just wrote an oxymoron! Anyhow, since I have been pretty stable, I've been trying to adapt some old recipes to the IBS diet, and I think I've nailed my old jambalaya recipe! Since there's a ton of rice in it, I've actually added chicken or turkey andouille sausage with no problems, but I know that there must be some "no-no's" in it (dark meat and skin, not to mention a high-fat content). Any suggestions? Many thanks, Jane

Boca Burger makes great "sausages." You can get Italian, Bratwurst, or Smoked... they're all soy and totally safe.

Hi Jane, I love jambalaya. I use sauage that I get at my regular grocers. I buy Lillydale and Mitchells and they have both chicken and turkey sausages. They are really yummy, and are low fat. Gail

SOY! Yep, there's a great soy sausage out there. I can even get it at the grocery store -- I don't have to go all the way down to the health food store 30 miles away. It's a bulk sausage, so you chop it up and brown it -- well, like you do bulk turkey sausage. It has a very unique flavor, and I found I can't use it in my spaghetti sauce for some reason; otherwise, it's great -- I love it in my lentil soup.
I use turkey sausage a lot, even though I'm sure there's dark meat in it. But I also like turkey ham, and I KNOW there's dark meat in that! It doesn't bother me -- but I eat it in small doses. I had it in scrambled Egg Beaters yesterday for breakfast, and even added a little soy cheese -- YUMMERS!

Thanks for the ideas everyone! I think I may check with the butcher and find out what spices he puts in it. this may give me an idea for seasoning . . . .
I ***Promise*** to post just as soon as I get the sausage thing right. I've tried jambalaya without the sausage, and it just isn't worth it!
