How long does it take for a trigger food to act?

Hi I want to know how long it takes for a trigger food to act? for example, last weekend I was at a party and ate a sausage thinking it might be ok because it was on bread with no butter. but 15 minutes later I had a severe attack and had to leave. the meat was well cooked but I dont think ill eat sausages again. would the fact the attack came on so soon mean it might be a food allergy? -Robbie

It depends on the individual -- and on the trigger. Was it pork sausage? Pork's a big trigger. When I have something like salad -- even with a soluble fiber beforehand -- I'll get a reaction like you got, within 15 minutes or so. Yet I never have a problem with another trigger such as dark meat poultry.
Other times, I'll eat something that is a little too high in fat (I'm addicted to Soy Dream Fudge Mocha, and sometimes I have a little more than one scoop), but it won't affect me until the next day. So there's no "set" time for a reaction from a particular trigger.
I think a food allergy shows up more in the form of a rash. It doesn't sound like you have an allergy, more of a gut reaction to the sausage. For me, any kind of pork would set me off BIG time; I wouldn't have been able to make it home from that party, and lucky if I could have made it to the bathroom before exploding!
