What are the general rules for the use of condiments such as catsup, mustard, salad dressings, etc?

I'm not sure about ketchup or mustard, but I know with salad dressings you just need to make sure they don't contain any dairy (Ranch does!) and watch the fat level. Fat-free dairy-free dressings such as FF Italian are fine. You can also make delicious homemade dressings... I have a great ranch dressing recipe if you want it!
