Why do I feel less hungry in the afternoon if I have a salad for lunch?

Yesterday I had a tuna sandwich and chips for lunch....a banana for a mid morning snack, saltines, lots of water a small snack in the afternoon and I felt hungry all day....
Today I had a very small salad with lettuce, spinach, grated cheese, green olives, dried pineapple, croutons and ranch dressing. I had a banana for a mid morning snack and lots of water and it is now 2:00 and I don't even feel hungry.
Just wondering why it is that I feel I had a smaller lunch today than yesterday, but yesterday I felt more hungry.

You mean the salad was your whole lunch?? Eek, I won't even touch that one. I'm amazed you weren't in the bathroom after that. As for the hunger, some days I'm just hungrier than others too, and I have no clue why. It sometimes seems to have more to do with the way my body is that day than any specific thing I ate. I agree, it's a little bit strange!

Back when I still ate salads, I remember reading a diet tip that said the roughage (aka insoluble fiber) in salads filled you up more and made you feel less hungry. Just a wild guess.

though I wouldn't say cheese was the safest way to go here. Your body needs fat for satiety. Fiber (soluble and insoluble) is very filling, but you digest it relatively quickly. Proteins and, even more so, fats, take longer to digest, thus keep you fuller longer.
Make sure you're having a good soluble fiber base first before you eat your small salad, and try adding the tuna or some soy cheese or even soy bacon bits to it for protein (or hard boiled egg whites, shredded chicken breasts, etc.). The tuna and soy cheese would already be getting you some healthy fats, so that's good.
