What Do You Use To Bind Tuna/Salmon/Egg Salad?

I really miss mayo at times like this. I'd like to get into the habit of having Tuna/Salmon/Egg Salad, but since I can not handle Mayo (even low fat...and non fat mayo is just nasty and filled with chemicals) I have given up on this for years.
I'm one of those IBSers who can't handle Mayo/Veganese fat (though I can handle Hummus/Guacomole). I'm curious if there is anything else I can use so that I can have to bind together these meats in a tasty sandwich?
I don't think guacomole/hummus would be so great, and that's all I can think of at the moment.

I use fat free or low fat salad dressings - I've used various flavors and they all give it some moistness and flavor.

What kind of salad dressing goes best to make a nice tuna/chicken salad?
French/Russian/Thousand Island?

It comes in small vacuum packed blocks at grocery stores, Mori Nu is a common brand. Add it to a blender and blend till smooth (can also do by hand with a whisk but it's not as fast and easy to get a really smooth result).
Use that as your base - add whatever seasonings or condiments you want for flavor.
I do this as a sub for everyhing from mayo to canned cream of soup. It's a great neutral, thick and creamy foundation that you can then flavor however you want.

You know I tried soy milk before and a few other soy products and they just seemed to cause me to get bloated and dried up. Honestly, I don't know how you handle it so well.
