Safe recipe for Bluebertry Muffins

When I was a growing up, we always had blueberry bushes and we would make all kinds of wonderful recipes. I now have some blueberries and would love a safe recipe for Blueberry Muffins. Does anyone have one they would like to share?

These are my favorite I have one almost everyday!enjoy!

Very Simple Blueberry Muffins
1 1/2 cups flour
1/2 cup sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup almond, soy, rice milk (i use almond)
1/4 cup canola oil
1 cup frozen blueberries
preheat oven to 400 place spray muffin pan with cooking spray.
Combine flour, sugar, salt, and baking powder, togther in a mixing bowl. Add milk of choice and oil mix.
Fold in blueberries (if using frozen do not thaw first)
pour into baking cups and bake 25-30 mints.
Makes 8 muffins

which is not blueberry muffins but blueberry pancakes - nonetheless wonderful!

Here's our family favorite, it's vegan and easily made GF:
2 cups of wwpastry flour (or 2 cups of BOb's Red Mill GF baking mix, if using this also add a heaping tsp of Xanthum gum)
1/2 cup of organic sugar
21/2 tsp of baking powder
1 1/2 tsp of eNrg egg replacer
1 cup of soymilk
2 TBSP of water
1/2 cup of earth balance

2 very ripe or thawed frozen bananas
1 cup of frozen blueberries

mix the dry and wet ingredients (minus the fruit) in seperate bowls - add the wet ingredients to the dry, mix well but do not over mix. add fruit
Bake at 350 for a minimum of 35 minutes - our oven sometimes takes 45 depending on how much banana I use.

These are great! THey are dense and moist, very much like little pudding muffins, very popular at our house and in our little circle of love...
