When I was a growing up, we always had blueberry bushes and we would make all kinds of wonderful recipes. I now have some blueberries and would love a safe recipe for Blueberry Muffins. Does anyone have one they would like to share?

Here's our family favorite, it's vegan and easily made GF: 2 cups of wwpastry flour (or 2 cups of BOb's Red Mill GF baking mix, if using this also add a heaping tsp of Xanthum gum) 1/2 cup of organic sugar 21/2 tsp of baking powder 1 1/2 tsp of eNrg egg replacer 1 cup of soymilk 2 TBSP of water 1/2 cup of earth balance
2 very ripe or thawed frozen bananas 1 cup of frozen blueberries
mix the dry and wet ingredients (minus the fruit) in seperate bowls - add the wet ingredients to the dry, mix well but do not over mix. add fruit Bake at 350 for a minimum of 35 minutes - our oven sometimes takes 45 depending on how much banana I use.
These are great! THey are dense and moist, very much like little pudding muffins, very popular at our house and in our little circle of love...
