SOURDOUGH BREAD ACIDIC? What is the PH?

I have to avoid ACIDIC foods like the PLAGUE!
Isn't SOURdough bread - very ACIDIC??? I have looked it up and it is med gi, due to the HIGH acidity yes? I don't want to give it up - ???
Also - apples, peeled are fine, but should I avoid granny green apples due to high acid levels?
One more thing - all this soluable fiber -GIVES ME GAS - and I started SLOW too...and although it does form a soluable GEL in there, it does not create (how shall I say)
"solid" results at ALL. Seem to need more ISF/but ISF is a trigger.

Please address all of my quandries - I'm new to all this.

Hi - I'd never thought of sourdough bread being acidic, but I think you're right. The lactobacilli in a sourdough culture produce a lot of lactic and acetic acids (which are what gives sourdough bread its flavor). If you have problems with sourdough, definitely avoid it and just use French or other plain white breads instead.

For the apples, I'd say the same thing. If granny smiths bother you because they're acidic, choose a mild red apple instead (I love Fuji). Defintely trust yourself and your own body with all of these things - if you think something is bothering you (especially since you know acidic foods are very problematic for you) then just avoid it to be safe.

For the soluble fiber, I'd guess you aren't taking enough. The dosage info is at web page

Make sure you're not using Metamucil or psyllium, which can cause gas. And any increase in gas from soluble fiber will definitely abate as your body adjusts. Lots of strong fennel tea can really help a lot here, too.

Insoluble fiber won't make things more solid - just the opposite, as it increases transit speed of matter in the colon and also increases the water content.

THANKS for responding...and THANKS for your book!

I'd never posted before and no one responded and I was beginning to lose hope.

So I guess sourdough bread is OUT for me, (maybe it works for people who HAVE a gallbladder/but I have bile salt D/IBS (maybe)anything acidic is a real no no for me!
I'll eat plain white bread or rice as an exception at a restaurant only -
I eat only foods that are low-moderate glycemic index/glycemic load - these foods keep me fuller longer and are more nutritous - closer to unprocessed. I eat oats, barley, pasta, the safe low gi vegs/not high isf, cooked well not in oil and only after soluable fiber - and fruit after soluable fiber or as dessert only. LOVE your book!!!!!!!

I also want to know if LONG GRAIN WHOLE rice is okay. I cannot tolerate whole wheat at ALL, but whole grain OATmealbread is fine - but I try to avoid processed foods/labels with "high fructose corn syrups" and "hydrogenated oils" are definately OUT - only fine deli breads don't use these ingredients! And NO olive oil in the bread (like italian)...it's a natural laxative! So for now breads/cheap white high gi rices are out unless at a restaurant and no other choice and in that case NOT whole wheat or sourdough!!

I'm slowly learning what works for me. The lower the fat the better, but if I go to low I'm hungry all day and my hair falls out/skin dries up bad bad. I try to stick to ONLY healthy fats - monoUNsaturated - peanutbutter - sparingly at that for example.

The apples, yes, granny smith are highly acidic as are citris fruits/juices. I won't eat bananas too high gi.


I do not take a fiber supplement/have in the past - WAY too much bloating from ONLY 1 tsp of metamucil, citrucel I get GELLED up inside and NOTHING moves. I'm an all natural gal.

I am trying to "firm" things up here and "slow things down"...even if I don't have IBS and only Bile salt D (from gallbladder removal) I do believe I will only benefit from your diet. My system must get as much bile absorbed as possible and avoid ANY irritation or speeding up of movement/or it gets spasms in my colon.

Just started the Caltrate D - 1/2 tablet with meals. But I eat small meals often...so do I take it every 5-6 hours of the day? My days are LONG and I can eat as many as 4-8 small meals a day of allowed foods. ?? Thanks again.
