We are also a very meat and potatoes kind of family (my husband loves southern cooking) so..the red meat thing kinda bummed me out. I use alot of hamburger for meatloaf, burgers, hamburger helper etc. I use Extra lean ground sirloin. I think it is 98/2% ratio. Would this be ok because of the lower fat count or not? I have also wondered about substituting ground turkey but I am afraid my husband and kids will freek with the change.

Hi- You really need to get yourself stable first, before you try adding in foods that are almost universal triggers. Try the ground turkey (make sure it's ground white meat, no skin) or using TVP, a soy substitute for ground meat. Try the sloppy joe recipe here web page to start, and search the recipe board and archives for more ideas. With a lot of these recipes, your husband and kids either won't notice the difference or are quite likely to be happy with the non-meat version.

Check the recipe board for southern cooking ideas, too. There are sweet potato recipes, rice and beans recipe, pecan pie, etc.

Red meat is not just high in fat (no matter how lean, it's still got saturated fat) and the proteins are really difficult to digest. It has a very low water content, and zero fiber. Red meat and dairy are the two greatest universal triggers, so see how you do completely eliminating it from your diet.

Search the boards for past posts on this too - other folks have had to deal with adjusting their diet when their families weren't happy with the change, and it can be done. Your health is really important and worth the change!
