Easy Apple Skillet Chicken

This is a wonderful, traditional recipe I learned from my grandmother, and it was already so IBS-friendly it didn't need a single thing changed. It's perfectly safe and competely delicious just the way it was.

Makes 3-4 Servings

3 whole organic chicken breasts, skinless and boneless
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon canola oil
1 cup white wine
1/2 cup apple jelly
1/2 cup currants or raisins, finely chopped

cooked brown or white rice for serving

Sprinkle chicken with salt and pepper and set aside. In a large non-stick skillet heat oil over medium heat and cook chicken until golden brown, about four minutes per side. Remove chicken from skillet. Add to skillet wine, apple jelly, and currants/raisins, and simmer, stirring constantly, until bubbly and smooth. Return chicken to skillet and baste with sauce. Cover pan and simmer 15-20 minutes or until chicken is just cooked through. Serve with rice.

Dear Heather,

I have had IBS for many years. Originally I was diagnosed with ulcerative colitis. No other doctor saw that except for the first one, with the first colonoscopy that I had. Since then I have been told by successive doctors that it is Irritable Bowel Syndrome. I have been on every medication imaginable, told to take fiber, etc. None of this ever worked for me. Sometimes I would go to the bathroom as many as 50 times a day.

Recently I found out that I had cholecystitis and had to have my gallbladder out. After my gallbladder removal my symptoms got about 50 times worse. I could hardly leave my house because of the diarrhea and gas. My employer started complaining about the odor, which was quite offensive. I literally almost became housebound.

Out of desperation, when traditional medicine couldn't help me I did a search on the internet and found your site. I had reached the end of my rope and was willing to try anything. I ordered the Tummy Tamers Peppermint Oil Capsules and the Peppermint Tummy Tea.

After only a week I am 100% better. I don’t have the volume, frequency, or gas any more. You literally have given me my life back in just one week! I don't know how to thank you for what you have done for me.

I really had no idea what kind of reaction I was going to get from him, but this one surprised me. He is curious to see how this goes for me. He said if this works he is all for it. divider Peppermint Oil Capsules in the Treatment of IBS
A recent study in Digestive & Liver Diseases aimed to test the effectiveness of enteric-coated peppermint oil capsules in patients with irritable bowel syndrome in whom small intestinal bacterial overgrowth, lactose intolerance and celiac disease were excluded.

Symptoms were assessed before therapy, after the first 4 weeks of therapy, and 4 weeks after the end of therapy. The symptoms evaluated were: abdominal bloating, abdominal pain or discomfort, diarrhoea, constipation, feeling of incomplete evacuation, pain at defecation, passage of gas or mucus and urgency at defecation.

Seventy-five percent of the patients in the peppermint oil group showed a greater than 50% reduction of total irritable bowel syndrome symptoms compared. The study concluded that a 4 week treatment with peppermint oil improves abdominal symptoms in patients with irritable bowel syndrome. More GI Symptoms, Less Anxiety With Tryptophan
A recent study in the American Journal of Gastroenterology found that patients with irritable bowel syndrome have an increase in gastrointestinal symptoms after ingestion of a large dose of tryptophan. At the same time, they report having fewer symptoms of anxiety and depression.

Participants ate a low-protein diet on the day before each phase of the study and fasted from midnight to 9:00 am on the day of intervention. Baseline levels of tryptophan were measured on that day and patients completed a questionnaire, answering questions about IBS symptoms and symptoms of anxiety and depression.

IBS patients reported more gastrointestinal symptoms but less anxiety with acute tryptophan increase compared with acute tryptophan depletion. Controls did not have a difference in symptomatology on either day. IBS patients had lower mood scores overall than controls during all phases of the study.

In the study, Dr. Shufflebotham and colleagues write that the findings "suggest a difference in serotonergic functioning between these two groups and provides evidence to support the hypothesis that 5-HT dysfunction is involved in IBS." Go here for more information about this study...


Breath Methane Levels Correlate With Constipation in IBS
A recent study in the American Journal of Gastroenterology found that the degree of breath methane production in patients with irritable bowel syndrome correlates with the severity of constipation.

"About three years ago, we discovered that methane on lactulose breath testing seemed to be highly associated with constipation-predominant IBS. We later found that the gas methane is actually the cause of this slowing of the intestine," senior investigator Dr. Mark Pimentel told Reuters Health.

In addition, the quantity of methane seen on breath tests was directly proportional to the degree of constipation reported by patients, and greater methane production correlated with a lower stool frequency and Bristol Stool Score.

"The association between methane and constipation," Dr. Pimentel concluded, "is really one of the first descriptions of a gas produced by gut bacteria, causing effects on the human they live in." Go here for comprehensive information about constipation...

divider Is Yogurt a Safe Dairy Product for IBS?
" I've eliminated most dairy from my diet, but I still have yogurt. I've heard that since yogurt is fermented, the lactose isn't a problem, and it does have live cultures. But, I really think the yogurt may be bothering my IBS. Should I stop?"

I get asked this question a lot - so often, in fact, that I've previously listed yogurt as one of the Seven Sneaky Sins of the IBS diet. I think it's time to revisit this issue for folks who missed the sneaky sins the first time around.

Yep, you should stop eating yogurt, as well as all other dairy products that are still in your diet. All dairy is extremely likely to cause IBS symptoms to flare - from diarrhea and cramps to constipation, bloating, and gas. Dairy products, including yogurt and Lactaid milk, have casein, whey, and typically a very high amount of fat as well.

To make yogurt, the live organisms Lactobacillus bulgaricus and Streptococcus thermophilus are added to milk; the cultures turn the milk into yogurt by converting lactose (milk sugar) into lactic acid. Though this makes the lactose easier to digest, this is really only helpful for people who are lactose-intolerant; it's not necessarily of any use at all for people with IBS.

Most people with IBS are not lactose-intolerant, but they still have tremendous digestive problems from dairy. The milk proteins casein and whey (which are always in yogurt, as well as all other dairy products) are very difficult to digest. Trace amounts of these proteins, such as the casein used in some soy cheese products, are often (though not always) quite tolerable for IBS. The large amounts of casein and whey in dairy, on the other hand, are likely to trigger IBS symptoms.

Dairy products, including yogurt, are often very high in fat, particularly saturated fat. Saturated fats tend to be the most difficult for the body to digest, and saturated animal fats are the worst of all. All fats are GI tract stimulants and can trigger IBS attacks, so a low fat diet is crucial for keeping your digestion stable. This means that the fats you do eat should be heart-healthy and mono-unsaturated/poly-unsaturated. All high saturated fat foods should be avoided as much as possible. You'll easily obtain the small amounts of saturated fat your body needs from a low fat diet that incorporates natural plant sources such as olive oil, canola oil, nuts, and flax.

The live cultures in yogurt can be highly beneficial to IBS and digestive health in general. However, you don't have to eat dairy to get these benefits. You can choose soy yogurt that contains live cultures, you can take probiotic supplement capsules, and you can use a prebiotic soluble fiber supplement such as Acacia that will encourage the growth of good gut flora. Using probiotics and prebiotics for IBS is an excellent idea, and likely to help reduce and prevent a wide range of symptoms. Fortunately, there's no need to upset your gut by eating dairy in order to obtain these benefits!
