Probably because there are a lot of people who don't believe that there's anything problematic in dairy other than the lactose. (This includes the first GI I ever saw about my IBS. If you ever want to hear a story about truly monumental illogic, ask me how he handled the issue of dairy.) In my darker moments, I wish all these people the type of IBS I suffered with before I found Heather's Website.

If you just wanted to vent, read no further. However, if you want some suggestions:

I'm sorry you don't like soy or rice milk. Assuming you can't find almond milk in the stores there, you can try making your own: web page. I haven't tried this recipe - I've never been a "sit down and drink a glass of milk" person and I use rice milk to cook with and if I want, say, cocoa I use soy or a combo of rice and soy - but a lot of people on the Boards love almond milk straight.

You can make your own ice cream. Heather's Chocolate Silk Pudding can be ice-creamed and there are recipes in the Recipe Index for ice cream. I haven't tried any of them yet but people seem to like them. (I got a gift card for Target for Christmas and I'm probably going to buy an ice cream maker with it. If it ever gets warm here.)

Whipped cream is tougher. There's a very odd recipe for making whipped cream out of - believe it or not - apples: web page. I tried this and it is surprisingly good. There are at least three other recipes for fake whipped cream - check under "Dairy Substitutes" in the Recipe Index: web page.

As for chocolate, be patient. If you can get your gut stabilized, you will probably eventually find you can eat a little chocolate without a disaster. In the meantime, I answered your plea for chocolate assistance on the Recipe Board.
