Well, first of all, you can definitely jazz up the sandwich a little bit. Plain turkey on bread sounds dreadfully dry. Mustard, fat-free mayo, and fat-free Italian dressing are all safe condiments. Adding a little lettuce and tomato is a super-safe way to incorporate IF (that's how I started!) and make your sandwich less boring at the same time. If you can eat grapes or a small salad, you can definitely handle putting some veggies on your sandwich.
Once you have the fat-free mayo, you can make all kinds of salads for sandwiches - tuna, chicken, even egg (leave out the yolks, add a little mustard).
There's oodles of safe pasta- and rice-salad recipes in the recipe index. Any of those make fantastic lunch food. Personally, I practically LIVE on Rachel's Almond Chicken Salad all summer.
Lately I've been eating an apple and a pb&j. Boring, classic, but it works.
If all else fails, dig into the dinner leftovers for lunch!
