I can't really see anything wrong with what you're eating, but I have some questions: How are you drinking your water? You're not gulping it down are you or drinking through a straw? Do eat slowly and chew well? (All these behaviors can cause you to swallow more air.) Do you feel like you have more gas when you're stressed out? Also, how do you know it's trapped gas and not bloating from spasms in your colon? Does the bloating go away after you pass gas?
