What would you use in place of Half & Half?

I have a really great mashed potato recipe that calls for Half & Half cream. Is there any substitute??

How about one of the substitutes for evaporated/condensed milk? They're about the same consistency as half and half. Otherwise, I'm not sure. I'd probably be lazy and just use soy milk, heh.

Thanks, that might work pretty darn well. These potatoes are what my grandmother makes for Thanksgiving and I love them. I didn't want to miss out this year.

I've used Silk Creamer for recipes that call for half and half. I've also used regular non dairy creamers.

Regular nondairy creamers still have dairy derivatives in them. For a lot of people, that's fine. But some people have touchy systems, and any dairy derivative is a trigger.
I wish someone made a rice-based creamer. I don't do soy, either.
