My mom-in-law is making braciole (beef for the others, chicken for me) for my father-in-law's birthday. She asked me to make a side dish to go with it. I haven't been able to find any ideas online. Does anyone have any suggestions? Thanks in advance!

It's an Italian dish that is basically a thin slices of meat that you top with stuffing, I don't know exactly what. Then you roll them up and pour tomato/pasta sauce over the whole thing & bake it. I'm not sure what my mother-in-law uses in her stuffing but it has never affected my IBS. She's really considerate of my situation & always uses substitutes for me. And thanks for the advice, I think the tomato & pasta salad might be good with it.
