I want to send my friend some treats for the holidays. She has IBS, so I want to make sure she can eat what I send. I was hoping for some cookies, but since she doesn't like chocolate, I'm having a hard time finding a recipe that sounds good. Can anyone help me out? I already bought soy milk, but didn't think to get dairy-free margarine, so anything that would work within those constraints would be greatly appreciated.

You could make her some biscotti and give it to her with some IBS safe teas (ginger, chamomile, peppermint, or fennel). The Crackel Spice Drops and Gingersnaps look good. There's also a safe sugar cookie recipe and oatmeal cookie recipe.
