Check these recipes from The Recipe Exchange Index : Crock Pot Spicy Chicken Chow Mein, Crock Pot Chicken Cacciatore, Chicken with Tomatillos and Rice, Chicken with Golden Vegetables, Chicken Stew, Chili, Laura's Cozy Veggie Vegetable Soup, Potato, Onion and Tomato Gratin, Wild Rice with Golden Mushrooms, Slow Cooker Apple Butter

My current revision of the index I'm working on I have them go "Slow Cooker - 'recipe' ", so it will be easier to find the slow cooker/crock pot recipes the next time the index is updated.

This is one of my favorite crockpot chicken recipes! It's easy and so delicious served over white rice!

Crockpot Garlic Brown Sugar Chicken

1 large chicken, cut into serving pieces (I use boneless, skinless breasts)
1 cup packed brown sugar
2/3 cup vinegar
1/4 cup Sprite or 7-Up soda (I think it's okay to use caffeinated soda because it cooks off. I've used Ginger Ale without a problem, too.)
2-3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon pepper (regular black or cayenne - I use black)

1. Place chicken in crockpot.
2. Mix all remaining ingredients and pour over chicken.
3. Cook on low for 6-8 hours.
4. Serve over rice or noodles.
5. You can thicken the juices after cooking with a little cornstarch.

Oh, crockpots are wonderful things!! "Crockpot" is actually a brand name for a type of slow cooker. You pretty much throw food into it and let it cook all day, and when you get home dinner is waiting for you! They have 2 settings, low and high. On low you usually cook things for between 6 and 10 hours, depending on what it is, while on high it usually takes 3-5. You also aren't supposed to open the lid very often, because that slows down the process quite a bit. I love my crockpot because things tend to come out sooo tender when they're made that way. And it's so simple to use!

Crockpot or slow cooker recipe 4 hrs high/8 hrs low:

2-4 Chicken Breast (cut up in small peices)
1 medium onion cut up
1 package turkey kielbasa or turkey sausage
3 potatoes cut up
1 can bush's baked beans

Layer these in crockpot in same order as recipe. This feeds a family of six with the four chicken breast so scale down as needed. You cannot screw this up. Sooooo good. I serve with warm cornbread.

Carrie, that looks great! I love Bush's baked beans. I'm pretty sure some contain bacon, though, so be sure to get vegetarian!

For two people:
Put 1/2 lb. meat (ground turkey or pork or chicken or beef) seasoned with garlic and black pepper in microwave on high for a few minutes. If you don't do meat, then use about 1 cup chopped mushrooms and onions and celery.

Meanwhile, dump these into the crockpot:
2 15-ounce cans black beans
1 15-ounce can diced tomatoes (mexican style with jalapenos)
1 7-ounce can salsa verde
1 teaspoon chili powder
1 teaspoon dried cilantro
1/2 teaspoon cumin

Stir this up, then chop or crumble or stir what's in the microwave and add that to the crockpot. Simmer on low for at least 4 hours.

I've never tried it, but I don't see why water wouldn't work. You might want to sprinkle it with a tiny bit of sugar too, since the soda probably sweetens it up a little.

I may seem alittle dumb here, but are you supposed to cook the chicken breasts before putting it in the crockpot, or are you supposed to put it in there raw? Should you like nuke it in the microwave first (for like a minute??)

Hi Shell! I don't see why not. You usually cook things for about half as long on HIGH, so I'd go with 4 hours to be safe. I hope you enjoy it!

I love this recipe too. It also works really well cooked in a large skillet if you're short on time. I put all the ingredients in the pan except the chicken and heated on medium to medium low until it was simmering. Then cubed chicken breasts and added them to skillet. Takes 20-30 minutes to cook chicken. Remove the chicken when cooked and add some cornstarch to thicken it, then add chicken back in. I like using ginger ale as the soda, it adds a little spicy zing to the sauce.
