This is the traditional definition of hummus:
Quote:
Hummus (also spelled houmous, hommus, hummous or humus) is a dip made of chickpea paste and tahini (sesame seed paste), with flavorings such as olive oil, garlic, lemon juice, and paprika.
From: web page
Now, though, hummus gets made of all kinds of things. I think the only requirement is that it have chickpeas (also called "garbanzos beans") in it. (Although even that isn't essential - one of the recipes on this Board uses black beans instead.)
To find recipes for hummus, go to the Appetizer and Snacks section of the Recipe Index: web page
Scroll down and you'll find a bunch of hummus recipes that start with "Dip -". I really like the Artichoke Hummus you'll find there.
There's also a very good Eggplant Hummus recipe in Heather's Eating For IBS Cookbook. It's on the Website here: web page

Hummus is delicious! But be careful about which brand you buy. I found that some brands have HFCS in them. I posted this on the Eating for IBS board, but I'll post it here too...I mixed a couple spoonsful of roasted red pepper hummus into my mashed potatoes & it was really good! It made the potatoes nice & tangy. My BF thought I was nuts, but I liked it!
