Cakelike Muffins?

I'm hoping you can lend some insight into my dilema:
We are having a meeting at my work, and everyone is bringing a little something to snack on for the few hours we'll be attending the meeting. Well, I know I'll only be able to eat if I bring something IBS safe, but I also want it to be something they will enjoy as well. I was thinking about baking up some muffins, but I know everyone has a sweet-tooth and i don't think the bread-like muffins I make (i.e. pumpkin muffins) would suffice.
Does anyone have any ideas for a sweet, cake-like muffin.. or anything else you might suggest for the meeting?

I just use the Betty Crocker mix brownies, substituting applesauce for the oil and egg whites for the whole eggs (one egg=2 whites). I also bake them in mini muffin pans, which gives each one a bite size serving. Easy to pick up and eat with no mess. I love Tess Louise's recipe for Antidepressant Brownies. These are loved by my housemates, so I think anyone would like them!

What do you think about a peppermint or mocha icing for the brownies? How would I go about making it?

Oooo, that sounds nice! I hadn't thought of icing them!
I guess you'd want to make a basic sugar icing, with icing sugar, boiling water and whatever flavouring you want. You could use cocoa for double choc, or peppermint essence. I'm at work so I don't have the volumes to hand, but it's pretty basic.

What about making rice krispy treats? I made some last week!! YUMMY!! Check the recipe index. The recipe is on there and it's sooooo easy!!! Took me like 10 min max!!!
