Bored of food

I've been on the diet for about 2 months now, with much success. I own Heather's 2 books and have read them cover to cover, taken notes, etc. But unfortunately, I'm a picky eater, so I have trouble finding things to eat.
I eat the same breakfast every day: English muffin with organic PB and a almond milk/frozen fruit smoothie. It's wonderful.
Dinner I usually do some version of pasta or chicken and rice. That's fine.
But for lunch, I'm getting so sick of it, I tend to just settle on a rice cake. I've been eating a turkey sandwich...plain turkey on bread, sometimes with some grapes or a tiny salad afterwards.
Anyone with other good lunch ideas? As many as you can think of would be great, because chances are, I won't be able to stand most of it. But I am getting desperate. The sandwich is so bland and boring.

Try making extra at dinner time and eat leftovers for lunch. I always make extra and freeze stuff for quick easy meals.
Some examples: Homemade Chicken Noodle soup Rice and Chicken with Tsao sauce Taco salad (with ground turkey breast) Baked potato with BBQ chicken breast and vegie Homemade (soy cheese)with turkey pepperoni pizza Pasta with Chicken
I also eat Turkey, avocado, lettuce, tomato sanwiches and tuna sandwiches.

Prepared meals that have always been safe for me:
Progresso chicken noodle soup Smart Ones turkey medallions with green beans Thai Kitchens rice noodle soups (except the Bangkok curry variety; it doesn't trigger an attack, but it does give me indigestion) My standard snack is one of those single serve cups of unsweetened apple sauce
For homemade lunches: Turkey sandwich with a slice of soy cheese and sliced mushrooms or slice of tomato Chicken noodle soup Leftovers from a safe dinner (that would be chicken or ground turkey)

Well, first of all, you can definitely jazz up the sandwich a little bit. Plain turkey on bread sounds dreadfully dry. Mustard, fat-free mayo, and fat-free Italian dressing are all safe condiments. Adding a little lettuce and tomato is a super-safe way to incorporate IF (that's how I started!) and make your sandwich less boring at the same time. If you can eat grapes or a small salad, you can definitely handle putting some veggies on your sandwich.
Once you have the fat-free mayo, you can make all kinds of salads for sandwiches - tuna, chicken, even egg (leave out the yolks, add a little mustard).
There's oodles of safe pasta- and rice-salad recipes in the recipe index. Any of those make fantastic lunch food. Personally, I practically LIVE on Rachel's Almond Chicken Salad all summer.
Lately I've been eating an apple and a pb&j. Boring, classic, but it works.
If all else fails, dig into the dinner leftovers for lunch!

I often eat squash soup (boxed, organic, made by Pacific, found at Meijers and usually is good for 3 lunches. I take it to work and warm it up in the microwave), white pita, hummus, carrots (I'm C) and some kind of fruit.
I also like to bring instant oatmeal, pita, and a banana. Yum.
Both of those are super easy to do at work and don't take a lot of prep.

I usually have a baked potato (no skins) with some applesauce or blackberries. Try a toasted bagel with PB and the pita with hummus is great, too.

Hi one of my favorite lunches is tthe homemade chicken nuggets with the panko you can make a whole tray full then freeze what you don't eat. You can have them with a baked pot or a baked sweet pot. Hope this helps Emmasmom ibs-c gas gas gas
