Lightening coconut milk

I just read something interesting. http://www.foodsubs.com/Nondairy.html It says you can lighten regular coconut milk by letting it settle and skimming off the top like whole milk or stock (I used to get fresh milk out of the cows as a kid and had to skim off the cream and then I would shake it up and make butter). Anyway I imagine this would lessen the fat considerably and make it pretty ok in a large recipe. Lite coconut milk from the can has 4 grams of fat per serving but maybe skimming regular would be a better idea.
