Scallops and Risotto       08/11/04 01:43 PM Edit Reply Quote KellyAndersson Reged: 03/24/04 Posts: 272 Loc: N.California There's a recipe online today in the Eugene, Oregon paper for scallops and risotto. I'm thinking that the scallops would maybe make it as is (Heather?) with a small bit of oil, but another good way to do them is to poach them in a small saucepan with white wine and black pepper and a lid.
